Caramel is one of the warmest notes in the gourmand family, the smell of cooked sugar at the edge of bitter: sweet, toasted and faintly smoky. Used soft it reads candy-sweet, but Abel uses a burnt caramel that turns dry and grown-up, more midnight than morning.

Caramel does not exist in nature as a single ingredient; it is what happens when sugar is cooked. So in perfumery it is composed rather than extracted, built from the smell of burnt sugar rather than drawn from a plant.

In natural perfumery that effect is built from naturally occurring molecules like maltol, which reads as burnt sugar, together with the wider gourmand palette of vanilla, tonka and labdanum that share its sweet, warm character. Abel builds its burnt caramel into a 100% natural composition, where it sits in the opening of Miami Split alongside green banana before the white oud and labdanum base takes over. Even a thread of caramel keeps a fragrance from feeling cold and holds it close to the skin.
